I have gotten more health conscious lately and have been looking for more healthy cooking tips.  As you age, you realize you need to eat better than you did when you were a kid.  As a teenager, a healthy meal was something or anything you could get your hands on quick.  Well as you age, you realize you need more than just something to fill your stomach.  You need something healthy too.  Not to mention, you have to watch those calories or you’ll end up getting bigger and bigger.  No one wants that.

Because of all of that, I found this site to be very helpful and has some great ways to cook in a much healthier way so if you’re with me on this one, check this site out and it just might be as helpful to you as it was to me.

Thanksgiving will be here before we know it.  I love looking for new Thanksgiving recipes each year. That keeps Thanksgiving new and something to look forward to for me. I hate it when you have the same old thing every year, don’t you?  There are some really great recipes on this site too.  I bet you will even find something to help make this Thanksgiving special for your family too.  I can’t wait to try some of the new recipes I found.

Our eggplants are coming in really good now in our garden.  I love just plain old fried eggplant long with other dishes I make.  When I fry then, I just roll them in a little flour and cornmeal.  I fry them in olive oil with just a little margarine in the oil.  That makes them brown really good.  Sometimes I add parmesan cheese to the flour mixture and them top the eggplant with marinara sauce with a little mozzarella cheese on top.  I usually slice the eggplant thicker when I do that than I do when I just fry it.  Anyway, eggplant is one of our families favorites.

The last time I did my grocery shopping I was pleased to find that they had Lipton tea on sale so I picked up several boxes. The problem is when I came home and opened one of the boxes in order to make a gallon of iced Tea, the bags more or less exploded in the hot water.  It made quite a mess everywhere.  I tried again, and the same thing happened.  I found the 800 number for their customer service department and gave them a call.

I received a heart felt apology and was sent several coupons in the mail for several free boxes of Lipton Tea Bags. Now that is what I call good customer service. Nice to see it’s still around.

Squash has always been a favorite of mine and I have several different ways to cook it that I have always enjoyed preparing and serving during these hot summer months.  I have a relative that grew up in or around the Boston area that has served us a wonderful squash dish that I ranted and raved so much about she decided to go ahead and share the recipe with me.  I thought that I might pass this rather tasty recipe along for you to try, I hope you like it.

  • 2 lb (6) Cups) Sliced Yellow Summer Squash
  • 1/4 Cup Chopped Onion
  • 1 Can Cream of Chicken soup
  • 1 Cup Sour Cream
  • 1 Cup Shredded Carrots
  • 1 8 oz Herb Seasoned Stove Top Stuffing Mix
  • 1 cup Melted Butter

Boil Squash and onion for 5 minutes and drain. Combine chicken soup and sour cream. Stir in shredded carrots. Fold in squash and onions. Combine stuffing mix and melted butter. Use a 12 x 7 casserole dish. Put half of stuffing on the bottom of the pan, then the squash mixture and top with remaining stuffing. Bake at 350 degree for 25 - 30 minutes or until heated through.   Serves 6
